  • 1/4 cup Maple Syrup or Honey optional sweetness
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon optional: add nutmeg for a twist
  • 1/4 tsp Salt
For the Topping (Optional)
  • 1/2 cup Chopped Walnuts or Pecans can use any favorite nuts or seeds

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish with parchment paper or grease it lightly.
  2. In a medium bowl, whisk together cottage cheese, eggs, maple syrup or honey, and vanilla extract until smooth.
  3. Add almond flour, baking powder, cinnamon, and salt to the wet ingredients and mix until fully combined, then fold in the grated carrots.
  4. If desired, fold in chopped walnuts or pecans into the batter.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes until golden brown and a toothpick comes out clean.
  6. Allow bars to cool in the baking dish for 10 minutes before slicing into squares.
