- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish with parchment paper or grease it lightly.
- In a medium bowl, whisk together cottage cheese, eggs, maple syrup or honey, and vanilla extract until smooth.
- Add almond flour, baking powder, cinnamon, and salt to the wet ingredients and mix until fully combined, then fold in the grated carrots.
- If desired, fold in chopped walnuts or pecans into the batter.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes until golden brown and a toothpick comes out clean.
- Allow bars to cool in the baking dish for 10 minutes before slicing into squares.
