Preparation Steps
- Preheat the oven to 350°F (175°C) and prepare your workspace.
- Halve the red bell peppers and place them cut-side down on a baking sheet. Roast for about 45 minutes.
- Once roasted, place the charred peppers in a covered bowl for about 10 minutes to steam.
- In a food processor, add garlic, tahini, cumin, coriander, and lemon juice. Blend until smooth.
- Add half of the white beans and roasted red peppers. Blend until smooth, then add the remaining beans and blend again.
- Slowly drizzle in reserved aquafaba or water until desired consistency is reached.
- Taste and adjust seasoning with salt, red pepper flakes, or lemon juice as necessary.
- Transfer hummus to a bowl, drizzle with olive oil, and garnish with herbs or red pepper flakes.
