Step-by-Step Instructions
  1. Sprinkle gelatin powder over cold water in a small bowl. Allow to sit for 5-10 minutes until bloomed.
  2. Combine heavy cream, whole milk, granulated sugar, cocoa powder, and salt in a saucepan. Heat gently over medium heat until hot but not boiling.
  3. Remove from heat, stir in chopped dark chocolate until melted and smooth.
  4. Return to low heat, stir in bloomed gelatin and vanilla extract until fully dissolved.
  5. Pour mixture into serving cups or molds. Cool at room temperature for 15-20 minutes, then refrigerate for at least 4 hours.
  6. Once set, run a knife around edges to loosen, invert onto plates, and garnish with whipped cream and chocolate sauce.
