Method
 

Step-by-Step Instructions
  1. Prepare the corn by grilling or boiling. For grilling, brush with butter and grill over medium-high heat for 10-15 minutes until charred. For boiling, cook in salted water for 4-6 minutes until tender.
  2. Once cool, cut the kernels off the cob and place in a mixing bowl.
  3. Optional: Sauté the corn in a skillet with butter for 5-7 minutes for added flavor.
  4. In a large bowl, combine the corn, mayonnaise, crema, cotija cheese, cilantro, jalapeño, lime juice, chili powder, smoked paprika, and cayenne. Fold to mix.
  5. Season with salt and black pepper according to taste and mix well.
  6. Chill in the refrigerator for at least 30 minutes to meld flavors.
  7. Serve with tortilla chips and garnish with additional cotija cheese and cilantro.
