Preparation
- Preheat your oven to 425°F (220°C).

- Allow the mixture to marinate for at least one hour or ideally overnight in the refrigerator.
- Prepare the chicken for cooking on a vertical gyro spit or with a DIY spit using skewers and a sturdy onion.
- Place the assembled gyro in an oven-safe dish, adding water or stock to the bottom.
- Bake for 75-90 minutes until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for about 10 minutes before slicing it into thin strips.
- Assemble your gyros with warm pita, sliced chicken, tzatziki sauce, and your favorite veggies.
