Ingredients
  

For the Crust
  • 200 g Digestive or Graham Crackers Use gluten-free cookies for a gluten-free version.
  • 1 tsp Ground Nutmeg Optional.
  • 1 tsp Ground Cinnamon
  • 100 g Dark Brown Sugar Light brown sugar works too.
  • 100 g Butter Melted.
For the Apple Topping
  • 4 medium Apples Pears or peaches are great substitutes.
  • 50 g Granulated Sugar Reduce for less sweetness.
For the Crumble Topping
  • 150 g All-Purpose Flour Opt for gluten-free flour if needed.
  • 100 g Dark Brown Sugar
  • 100 g Butter Softened.
For the Cheesecake Filling
  • 600 g Cream Cheese Full-fat is preferred.
  • 150 g Granulated Sugar
  • 200 g Sour Cream Greek yogurt can be used as a substitute.
  • 2 tbsp Cornstarch All-purpose flour can replace it.
  • 1 tsp Vanilla Extract
  • 3 Large Eggs Room temperature.

Method
 

Crust Preparation
  1. Preheat your oven to 160ºC (325ºF). In a food processor, combine digestive or graham crackers with ground cinnamon, nutmeg, and dark brown sugar until finely crushed. Slowly drizzle in melted butter, mixing until the texture resembles wet sand. Press this mixture firmly into the bottom of a springform pan and bake for 10 minutes. Allow to cool slightly.
Apple Preparation
  1. Dice fresh apples into small chunks and toss them with granulated sugar and a sprinkle of cinnamon. Let them sit for about 15 minutes.
Crumble Preparation
  1. In a separate bowl, combine all-purpose flour, dark brown sugar, and softened butter. Blend until crumbly and set aside.
Cheesecake Filling
  1. In a mixing bowl, beat cream cheese until creamy. Gradually add granulated sugar, then blend in sour cream, cornstarch, and vanilla extract. Add eggs one at a time until mixed.
Assembly and Baking
  1. Pour cheesecake filling over the cooled crust. Layer cinnamon sugar apples on top and sprinkle with crumble. Bake for 1 hour and 20-30 minutes.
Cooling
  1. After baking, let cheesecake cool in the oven with the door ajar for 1 hour before chilling in the refrigerator for at least 6 hours.
