- Preheat your oven to 350°F (175°C) and grease a 1.5-quart baking dish.
- Cook the jumbo pasta shells in salted boiling water for 8-9 minutes until al dente, then drain and rinse.
- In a bowl, mix chopped turkey, mashed potatoes, onion, celery, garlic, and half of the cheese. Season with salt and pepper.
- Spread ¾ cup of gravy on the bottom of the baking dish and fill each pasta shell with the turkey mixture.
- Sprinkle leftover stuffing on top, drizzle remaining gravy, and layer with the rest of the cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Let cool for a few minutes, garnish with parsley or chives, and serve warm.
